Ingredients5 Tbsp. olive oil
4 Tbsp. butter or margarine
4 large onions, about 4 lbs., cut into thin slices
2 tsp. salt
1 tsp. sugar
fresh ground black pepper to taste
1 round prepared pizza shell
2/3 c. walnuts, chopped
4 oz. Roquefort or other blue cheese, crumbled
Directions
In a large, heavy pot, heat 4 Tbsp. of oil with the butter over medium heat. Add the onions and salt and cook, stirring frequently until the onions begin to brown, about 20 minutes.
Add sugar and cook, stirring frequently, until the onions are well browned, about 15 minutes longer. DO NOT burn onions or undercook. Season with pepper.
Brush crust with remaining 1 Tbsp. of olive oil. Spread onions on the crust and top with walnuts and cheese. Bake until cheese starts to brown and softens, 8-10 minutes.
