Ingredients1 pkg. (14 oz) dried apricots
1/2 c. whole almonds
1 lb. quality sliced bacon
1 c. plum or apple jelly
2 Tbsp. low sodium soy sauce
Directions
Fold each apricot around an almond. Cut bacon strips into thirds; wrap a strip around each apricot and secure with a toothpick. Place on baking sheets. Bake uncovered at 375 degrees for 25 minutes or until bacon is crisp, turning once.
In a small saucepan, combine jelly and soy sauce; stir over low heat for 5 minutes or until warmed through. Drain apricots on paper towels. Serve with dipping sauce.
(You can substitute water chestnuts or scallops for the apricots.)
